I normally tell, with technical problems that can be fixed easily like too much salt. It is surprising how many places that otherwise would provide an impeccable experience end up shooting themselves in the foot by not checking the sauces or soups for seasoning. If a certain dish is not prepared to my liking or expectation, being an aesthetic choice on the part of the cook to prepare it that way, I probably would not say anything.
