Thanks for the review. Glad to hear that M.Wells has re-opened. Their previous location (49th Ave) was one of my favourite food destinations in Nyc, despite my familiarity to their type of food (the Chef, Hugue Dufour, was working at Au Pied de Cochona long time ago, here in Montreal, so there's a bit of APDC's influence in what they do, although I find APDC to not be as exciting anymore since he left). I read in the nydailynews.com (article of Amanda P. Sidman / Jan 18th 2012) that they would cook mostly sous-vide """since the space is mostly without gas"". I hope that is not the case since this is great comfort food that's better enjoyed fried/grilled/baked/roasted, etc.
