8.1 Fulgurances (with Sam Miller, January-March 4th 2017), 10 rue Alexandre Dumas in the 11th, 01.43.48.14.59, (Metro: Voltaire) is an experiment that has been pretty successful over the past few years in bringing in new chefs for a while and then spinning them off to new adventures. In this case, Sam Miller from York, GB has been at the piano a mere 9 weeks but reports have been glowing.
He first sent out a piece of grain flat bread that looked like a piece of bark filled with gently pickled cauliflower that was fabulous. Then my fellow blogger and I both had the pickled beets in rose vinegar with cassis berries that was other-worldly. As mains we diverged, Madame choosing the mackerel topped with raw mushroom slices and I with a fantastic joue de boeuf with onions 3 ways. Finally we both had thinly sliced roast pear with a yuzu yogurt that was again heavenly - but wait,...out came nice slices of orange cake, equally heavenly. My oh my!
Our bill, with a bottle of wine from the Ardeche, their bottled water, terrific bread and 2 coffees, was 81E. dB's = 86.5, pretty loud from what was a more mature but not aged native clientele.
Go? Well, Sam Miller is only there two more days but I am so trusting in the Fulgurance crowd's judgment that I'm going to try the next chef, no matter where from, next week.
