I think the “The same guy as when I am” line is a Bocuse quote actually. Or at least that's what I read... can't remember where (a Millau book, maybe?).

Could be; I recall it being quoted when Ducasse was flitting all over the globe setting up new outposts in Tokyo, NY, HK, etc., but like the quote usually attributed to Henry Kissinger "If you don't know where you're going, any road will take you there" it may go back to Roman times.
