Because of my fear of mixed or conflated reservations, three of the four of us eating together today got to Spring early and had time to chat and chill. I am well aware of some of the negative stuff posted on the web as well as my clear conflict of interest in being an early adapter of Spring, so whatever I say may be discounted, but the welcome, organization, flow of dishes and overall ambiance was as superb as ever, as of course was the food.
We were started off with an amuse bouche of fresh horseradish "cream", trout eggs, radish slices and something else whose name I missed - quite heavenly. Then in progression we had:
.... a lovely sauteed scallop on a ginger-flavored, smoked chestnut puree with pomegranate seeds, topped with sliced and toasted chestnuts; the next dish - a lovely bouillon, included rouget, foie gras, leaves of Brussel sprouts, carrots and mushrooms "disguised" as seaweed - the extra photo shows the addition of a bit of chicken bouillon.
We had no cheese but two desserts, the first (above) sous-vided pears with creme fraiche and a cocoa bean tuile and then a small serving of wonderful caramel sauce, chocolate and chestnut cream followed by coffee with a small and delicious chocolate "treat".
Our bill with two bottles of wine, one water, and the four coffees was 113.00 E per couple.
Go back? Next Friday in fact.
Known as one of Paris Best, that is quite an achievement for Spring given the status of Paris as a gastronomic city. I guess I have no other choice but to consider Spring very high on my eat list when visit la ville lumière.
